This quick simple healthy dinner is one of my go-to weekly meals. It comes together quickly and can be utilized in so many different ways. You can cook rice and add various toppings to make a delicious bowl. You can add a tortilla and turn it into a burrito, taco, or quesadilla, or spoon it over some tortilla chips and make nachos.
The possibilities are endless with this. It stores and reheats deliciously, so it’s a great meal prep dish. Get your favorite meal prep containers, add a little rice, your meat, and then your hot sauce and toppings and you are good to go. I love it – and I know you and your family will love it too!

Many of these ingredients can be stored in your pantry or freezer, so this is a great meal to pull out when you forget to plan dinner. Quickly defrost some ground beef and pull out the rest of your ingredients, and you are good to go.

If you like the Mexican style rice – this is a quick and easy way to make it. (not authentic). I just do 1 cup of minute rice and 1 tsp of the Knorr Caldo de Tomate con Sabor De Pollo (affiliate link).

Stir it up together and then microwave it per the box. You can also make rice the real way and just stir in the seasoning with it – I also like to cook the rice with broth instead of water – adds more flavor.

Step 1 add your beef to the pan. Cook on high heat.

Use your little ground beef smasher (life changing I just bought one like a year ago) and mash up that ground beef and brown it.

I like to add salt pepper and garlic while I am cooking my beef to give it some more flavor. Once your beef is all cooked drain the excess fat.

Drain and rinse your black beans. I love to add the black beans for more protein and added fiber.

Add the black beans to your skillet.

Open your frozen vegis and add to the skillet – You could also use fresh if you are an overachiever – kidding! I love fresh too, but I wasted a lot of produce letting it go bad on accident before cooking it – so these freezer bags are a life saver! They come in handy when you want to make a quick simple healthy dinner.

Add in your taco seasoning. Like I said – I don’t measure this. I pour it on where it looks like its too much, but its not. And I sample the beef as I go until it gets the right flavor. I want to taste the seasoning but not too much – I also add more salt if it needs more.
Once you have your meat and veg seasoned to your likings – you are done. Just make sure your vegis and beans are heated up and you are good to go. Time to plate!

Tried and true variation of this is putting it on a tortilla, add some Mexican cheese and maybe the queso and whatever else you want – this picture was of tacos for my daughter and she doesn’t really want all that extra stuff, she basic. 🙂

You could also roll these up into little burritos. Add all your fixings and then roll it up. We use the carb balance tortillas to add more fiber. Fiber and protein are important. 🙂

A classic version for me. Add the rice and meat and all your toppings as a little “bowl” with some tortilla chips on the side. Or make it into a nacho pile – depending on the mood you are in.

Feeling healthy? Taco salad is AMAZING. So fresh. Just pile all your toppings onto a bed of lettuce and there you go – quick simple healthy dinner. You can even smash a few tortilla chips on top for some added crunch.

Or you can portion this out into individual meal containers and have your meals prepped for lunch or dinner. This is one of my favorite meal preps because it taste good reheated.

Equipment
- skillet
- ground beef masher
- strainer
Ingredients
- 2 lbs ground beef organic (you could also 50/50 this with bison)
- 1 bag frozen pepper & onion medley
- 1 can black beans (drained and rinsed)
- 2 tbsp Taco Seasoning to taste
- 1 tsp salt to taste
- 1 tsp pepper to taste
Instructions
- 1. Brown your ground beef in a large skillet until cooked. Drain.
- Add in your bag of frozen vegetables and rinsed black beans to the skillet.
- Add your taco seasoning, salt, and pepper to taste. I measure seasonings with my heart and keep adding and stirring until I have the desired taste.
- Simmer while stirring occasionally until vegetables are cooked.
